Freddo Cappuccino

Φρέντο καπουτσίνοFREH-doh kah-poo-CHEE-no

Frothed iced espresso under a thick, dense cap of cold milk foam that you drink the coffee through. The foam is the whole drink, and the counterintuitive part is that it is made best with low-fat milk.

Ingredients

Scale:

Note: Greek cafes often froth the milk with a dash of cream in it for a richer cap. Ten millilitres of single cream in the 70 ml is about right.

Method

  1. Make the freddo base

Pull a double espresso into a metal frothing cup with the sugar and three ice cubes. Froth with the spindle for about fifteen seconds until it turns pale and creamy and the ice has mostly melted.

The method is the same as a freddo espresso. The shot must be hot when the ice goes in.

    Froth 15 seconds
  2. Pour over fresh ice

Fill a tall glass with fresh ice and pour the frothed coffee over it, leaving about a third of the glass empty for the foam.

  3. Froth the cold milk

Rinse the frothing cup, add the cold milk and froth it on its own for twenty to thirty seconds, moving the spindle up and down. It should double in volume and turn thick enough to hold a spoon briefly.

This is afrógala. No heat, no steam.

    Froth 20 to 30 seconds
  4. Cap the coffee

Spoon or pour the foam onto the coffee so it sits as a thick white layer, two or three centimetres deep. Dust with cinnamon or cocoa if you like and push a straw through.

In Greece you drink the coffee up through the foam, so the milk arrives slowly and the last sips are the creamiest.

Why this works

Cold milk foam depends on protein, not fat. When you whip milk, the whey proteins unfold at the surface of each bubble and link up into a film that holds the air in. Fat droplets get in the way of that film and burst bubbles, which is why skimmed and semi-skimmed milk froth into the stiffest cold foam and full-fat milk produces something looser and quicker to collapse. At steaming temperatures the fat melts and behaves differently, but at fridge temperature low fat simply wins.

That is also why the milk needs to be properly cold. The colder the milk, the more viscous it is, and the slower the liquid drains out of the foam. Room-temperature milk whips up and slumps within a minute.

The coffee underneath is a freddo espresso and works for the same reason: hot espresso hit with ice while being aerated sets its oils around the air and gives a dense, stable foam of its own. Two foams, one coffee and one milk, sit on top of each other without mixing because the milk foam is lighter.

Freddo espresso and freddo cappuccino appeared in Greek cafes in the 1990s and pushed the older frappé off the top of the order list within about a decade. The name borrows from Italian, the drinks do not. You will not find either in Italy.

Variations

  • Sketo, metrio, glyko: no sugar, two teaspoons, or four. Add it to the hot espresso before frothing or it will never dissolve.
  • With cream: replace 10 ml of the milk with single cream for a richer cap.
  • Freddo cappuccino latte: more milk, poured in beneath the foam, which is a thinner, milkier drink.
  • Plant milk: barista oat froths well cold. Most other plant milks will not hold.

Questions

What is the difference between a freddo espresso and a freddo cappuccino?

The milk foam. A freddo espresso is frothed iced espresso and nothing else. A freddo cappuccino is the same drink with a thick cap of cold frothed milk, called afrógala, on top.

What is afrógala?

Greek for milk foam. In a freddo cappuccino it means cold milk whipped with a frother, without steam, until thick. Low-fat milk gives the stiffest result.

Why does skimmed milk foam better cold?

Foam is held up by milk proteins forming a film around each bubble. Fat droplets break that film. At fridge temperature, less fat means a firmer, longer-lasting foam.

Can I make a freddo cappuccino without an espresso machine?

Use 60 ml of strong moka pot coffee, hot, and froth it with ice the same way. The foam on the coffee will be thinner, the milk foam will be identical.
